Quebraditas Coffee Farm은 콜롬비아 중앙 산맥에 위치한 농장으로, 해발 1,600–1,850m에 걸쳐 총 18헥타르 규모로 운영되고 있습니다.

수확 단계에서 최소 90% 이상의 완숙 체리만을 목표로 선별 수확을 진행합니다.

이후 플로팅(floating) 과정을 통해 덜 익은 체리, 과숙 체리, 건과를 제거하여 가공에 투입되는 원료의 균일도를 확보합니다.

선별된 체리는 식품용 플라스틱 드럼에서 16시간 동안 산화(Oxidation) 과정을 거칩니다. 이후 드라이 펄핑(dry pulping)을 진행하고,

펄핑 후 24시간 추가 산화를 통해 점액질을 제거합니다.

그 다음 단계에서 45°C의 물로 세척하여 열 충격(thermal shock)을 주며 가공을 이어갑니다. 마서레이션(Maceration) 단계에서는 해당 품종의 과육(pulp)을 스타터로 사용합니다. 이 스타터에 hybrid Saccharomyces cerevisiae, Saccharomyces bayanus 효모를 접종하며, 25°C 이하의 컨트롤된 온도에서 36시간 동안 발효를 진행합니다.

발효가 완료된 후에는 5°C 저온 세척을 통해 발효를 안정화합니다.

건조는 평균 40°C 환경에서 76시간 동안 진행되어 적정 수분 상태에 도달하도록 관리됩니다.

마지막으로 커피는 GrainPro 타입 백에 패킹되어 품질 안정성과 보관성을 확보합니다.

Quebraditas Coffee Farm is located in the Central Mountain Range at 1,600–1,850 meters above sea level, the farm spans 18 hectares.

The harvesting process ensures that at least 90% of the cherries are fully ripe. Following this, the cherries undergo floating to separate green, overripe, and dry cherries, ensuring only the highest quality are processed further.

The next step is oxidation, conducted in food-grade plastic drums for 16 hours. Afterward, the cherries are pulped dry, and another round of oxidation occurs post-pulping for 24 hours to remove the mucilage. This is followed by washing the coffee at 45°C, creating a thermal shock to enhance processing.

For maceration, pulp from Geisha, Sidra, and Pink Bourbon varieties is used as a starter culture, which is then inoculated with Hybrid Saccharomyces cerevisiae x Saccharomyces bayanus yeast. The fermentation process lasts 36 hours at controlled temperatures below 25°C, utilizing specific yeast strains. Once fermentation is complete, the coffee is washed at 5°C to seal the fermentation.

Drying follows, lasting 76 hours at an average temperature of 40°C to ensure optimal moisture content. Finally, the coffee is stabilized in GrainPro-type bags to preserve its quality.
